Preparing Stuffing :
Take a wok. Add oil. Heat. Add cumin and coriander seeds. Add cashew nuts. Roast. Add green chillies. Roast. Add onions. Saute. Now add boiled and mashed potatoes. Salt, black pepper and amchoor.
Cook. Mix properly. Switch off flame. Let it cool.

Now for outer layer.
Bind a tight dough with the above mentioned ingredients. Keep aside for 10 min.
Now take some quantity of dough. Roll it with a rolling pin. Cut sides and make a square sheet. Apply water on all four sides. Keep stuffing and fold the sheet in half. Press from all sides.
You can use fork also to press three sides.
Make all pockets. - 3
Now preheat oven at 180•c for 10 min.
Bake potato pockets at 180• c for 25 min or till outer layer is crisp.
While baking brush pockets with oil.
Keep flipping in between to ensure they are baked from all sides equally.Enjoy😊
