I and my family enjoy lentils but this time it was in coconut
Cooking Instructions

Wash the lentils in water,drain place into a sufuria covered with cold water and bring to boil.Boil untill tender.

Heat some oil in a separate sufuria,sweat onions,add garlic,ginger and let it cook for2_3minutes

Add salt,royco cube,curry powder and tumeric powder for futher 2_3minutes,then add tomatoes and the green capsicum and let it cook.

Add the boiled lentils in to the mixture,mix it well and then add the thin coconut milk first let it cook for about 7_8 mins when it's almost dry add the thick coconut milk and let it simmer for about 10-15 minutes.You can now serve with chapati or rice......enjoy

Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like . I had a family size bag of ravioli in the freezer that was forgotten for a minute. I forgot to thaw anything for dinner. Go me. Story of my freakin life. We needed a change from marinara. I wanted to make a fun meal that was very original and that people wouldn't get tired of. It had to be inexpensive and delicious, too. I don't know if a dish like this already exists, but I thought it sounded like a good combination and tried it out. Result: it was very tasty, so I turned it into a recipe.I wasn't sure whether I should stir fry the flour with the chicken, but mixing it with milk worked fine.
