Two days ago I cooked some broccoli rabe, and this morning I made meringues. I had leftover broccoli rabe and egg yolks... so what to do? A delicious and easy leftover frittata!

The leftover frittata is a quick and tasty dish. You can make it with any vegetables or meat you have in the fridge from previous meals.

In this case, I had egg yolks left from making meringues, but you can use whole eggs if you prefer.

Chop the broccoli rabe, or whatever vegetables or meat you have on hand.

Beat the eggs, then add salt and pepper.

Gently mix the chopped broccoli rabe into the eggs.

Heat 1 tablespoon of extra virgin olive oil in a nonstick skillet. When it's hot, pour in the egg mixture.

Let it brown on one side, then carefully flip the frittata and brown the other side.

Once cooked, cut it into 4 or more pieces and serve. It's also great as a sandwich filling!
