I'm on a quest to "eat my colours", so I decided to try making a colourful moi moi.

I'm on a quest to "eat my colours", so I decided to try making a colourful moi moi.

Steps

Wash the beans with the aim of peeling away the outer skin

Add 7 out of the 12 fresh peppers, the handful of crayfish, tatashe (be sure to take out the seeds) and half the onion and mill until smooth

Dice the remaining onion, pepper and green peppers (taking care to remove the seeds) and carrots. Feel free to add any other vegetables that catches your fancy. The aim is to have as many healthy colours as possible.

Add the salt and stock cubes to the milled beans, then, add the diced vegetables and mix

Prepare your pan by rubbing palm oil all over the sides and dusting with flour

Adjust the seasoning and turn into your containers. You can also use waterproof.

Cook or steam-bake until it solidifies. P. S. I steam-baked this by putting water in my oven tray and placing the pan on the rack.
