Mango Kalakand

Boil the milk,and make chena from it.U can use either vinegar or lime juice. Once chena is done, wash thoroughly with cold water, so that the sourness goes away.

Mash the chena with the palm of ur hand to make a smooth paste.Now take a non stick pan,and put the chena in it.Keep the flame low, and keep stirring continuously. Add a pinch of salt. Add a drop of mango essence, and a drop of yellow colour. Mix properly. Now add the mango pulp. Keep stirring till the moisture evaporates, keeping a slight smooth texture.

Grease a thali with ghee, and pour the chena/mango mixture on the plate.With the help of a spatula make the surface plain. Leave it to cool, either in the fridge, or in room temperature.

Once cooled, cut into ur desired shape. Here I have done barfi style.U can make it square also. Decorate each piece with a small mango cube. This sweet should be soft in texture.Mango Kalakand is ready to be served.
