Ingredients

  • 2/3 cupwater (150 g)
  • 1/3 cupunsalted butter (80 g)
  • 1 pinchsalt
  • 1 cupall-purpose flour (130 g)
  • 3eggs

Steps

    Heat the water and butter together.

  2. 2

    Add the flour. Mix well until a smooth ball forms.

  3. 3

    Let the dough rest for 10 minutes.

  4. 4

    Preheat the oven to 400°F (200°C).

  5. 5

    Add the eggs one at a time, mixing vigorously after each addition to fully incorporate them.

  6. 6

    Continue stirring the dough off the heat to dry it out.

  7. 7

    Transfer the dough to a piping bag and pipe into your desired shapes—éclairs, religieuses, cream puffs, or chouquettes.

  8. 8

    Bake at 400°F (200°C) for 20 minutes (I bake for 30 minutes).

  9. 9

    Fill with pastry cream in your favorite flavor—vanilla, chocolate, or praline for a Paris-Brest effect.

  10. 10

    I topped them lightly with icing (powdered sugar mixed with lemon juice).
