Transfer the dough to a piping bag and pipe into your desired shapes—éclairs, religieuses, cream puffs, or chouquettes.

Bake at 400°F (200°C) for 20 minutes (I bake for 30 minutes).

Fill with pastry cream in your favorite flavor—vanilla, chocolate, or praline for a Paris-Brest effect.
