Cooking Instructions

Grind the pepper with the ginger, garlic and black pepper, add to the meat, then parsley, seasonings, chopped onions, a little egg & oil.

Mix together, if it's watery, add the bread crumbs or flour. Roll them, (like in the picture)
Soak the skewer sticks for 10 minutes, then insert the sticks into the meat & roll on the skewers.
After that I kept them in the freeze, like 15minutes while I made the bread.

Place the meat on a grill, toaster grill or oven. (I place on the toaster grill, for like 10 minutes then transfer to the oven for about 15minutes, turn them over In between.)

I usually buy naan, but I made it this time to go with a curry.When I ate the freshly baked naan that was topped with aromatic cumin seeds and coriander, I was amazed at how easy, delicious and economical it was. It made me think I should make it every time instead of buying it.The dry yeast is active if it foams after adding the lukewarm water.If using fresh coriander leaves, you can knead it into the dougn in steps 4-5; it's delicious and I recommend it.Please adjust the amount of liquid if needed depending on the environment, temperature and so on. This is a meat dish that my Dad apparently ate a lot when he lived in Turkey.I re-arranged the recipe so that's easy to create at home.Since Turkey is a Muslim country they don't eat pork. Therefore if you want to make authentic kofta you should try making them with minced beef or mutton.The key to this recipe is to keep mixing the ingredients together until the mixture becomes sticky.You can adjust the amount of cumin powder and red pepper to achieve the level of spiciness that's best for you.Kofta aren't traditionally eaten with sauce or condiments so it's best to flavour them well before cooking.
