Sauté the onions, garlic, and meat with the oil and salt over low heat.

Add the spices and 1 tablespoon tomato paste, sauté briefly, then add water. Let it cook in a pressure cooker.

Prepare the couscous by rinsing it in a large bowl, then draining it well in a steamer basket. Fill the pot with water and place it on the stove. Once the couscous is drained, transfer it to a large bowl, add salt and oil, then return it to the steamer basket. Place the basket over the pot and steam the couscous.

When the couscous has steamed for the first time, transfer it to the bowl, sprinkle with a little water, and let it absorb. Steam it a second time. After the second steaming, transfer it to the bowl and mix in a little butter.

For the sauce, once the meat is cooked, strain the sauce. Return the strained sauce to the pressure cooker, add the chickpeas or any vegetables you like, close the lid, and cook until done.

Sort through the raisins to remove any stems or debris, then steam them as well.

Place the couscous on a serving platter, top with chickpeas and raisins, and drizzle with the sauce as desired.
