Heat up a kadai and add oil into it.

Add cumin, curry leaves. Once they start to splutter add chopped onions and green chillies. (Add a tsp pf ginger garlic paste if you like)

Mix well and saute till the onion changes to golden brown colour.

Now add carrots and potatoes.

Sprinkle turmeric powder, coriander powder, chilli powder and a pinch of garam masala, required salt.

Mix everything well and Cover/cook for 10 mins in a low flame or until the veggies becomes soft and mushy.

Switch off the flame and garnish it with coriander leaves.

Serve it with steamed rice, sambar.
