Ingredients

  1. 350 gmsoul fillet
  2. to tasteSalt
  3. to tasteFreshly ground black pepper
  4. 1/2 mug plain white flour
  5. 3 tbspolive oil
  6. 3-4leeks, cleaned, trimmed and finely sliced
  7. 100 mlwhite wine
  8. 200 gmcream
  9. 1/2 tspmustard
  10. Handfulroughly chopped parsley and basil

Cooking Instructions

    Season the fish well on both sides

    Put the flour on a large plate

  3. 3

    Coat the fish in flour and keep aside

  4. 4

    Heat oil in a large pan over medium heat. Add leeks. Lower the heat, cook till they are soft

  5. 5

    Add the qine. Bubble it up and reduce by half

  6. 6

    Then fold in mustard and cream. Take off the heat while you cook fish

  7. 7

    Now place a another pan over high heat. When it's hot add a splash of oil. Let it warm for a minute. Add fish and cook till golden on each side

    Warm the sauce back for minute. Taste season or serve. Put some hearbs over it like thyme, rosemarry, etc

    For a colouful presentation you can add lemon weges and lettuce at the base of fillet as shown in picture above
