This is Algerian couscous with white sauce, usually made for weddings with just lamb and chickpeas. When we crave it, we also make it with vegetables and lamb, and it turns out delicious.

This is Algerian couscous with white sauce, usually made for weddings with just lamb and chickpeas. When we crave it, we also make it with vegetables and lamb, and it turns out delicious.

In a large pot, add the lamb, clarified butter, and oil. Sauté well until the lamb changes color. Then add the onion, garlic, all the spices, salt, and cinnamon stick. Sauté again, then add a small cup of water and the chickpeas and carrots. Add more water to cover the lamb, then cover and cook.

Place the couscous in a large bowl. Pour water over it, then drain and let it rest for a bit. Drizzle with a little oil and fluff the grains. Steam the couscous twice, then transfer to a large serving dish and mix in the butter.

Peel the zucchini and potato, add them to the sauce, and let the sauce thicken. Add a hot chili pepper if desired. Pour the sauce over the couscous and serve. Enjoy!
