Ingredients

  • 1 1/2 C.water
  • 2 1/2 C.white vinegar
  • 25black pepper corns
  • 2bay leafs
  • 2small hot chile peppers
  • 4 Tbsp.pickling spice
  • 4 Tbsp.coarse salt
  • 1 tsp.mustard seeds
  • 2 Tbsp.dill
  • 1large red onion
  • 4-7 clovesgarlic, peeled and roughly chopped
  • 1 packsplenda
  • 18hard boiled eggs

Steps

  1. 1

    Mix all the ingredients except for the eggs in a large pan.

  2. 2

    Peel the hardboiled eggs and poke each one with a fork a few times.

  3. 3

    Bring to a boil and simmer for 5 minutes.

  4. 4

    Seal the jar and let it sit in your fridge for 2 weeks.

I am a 42 year old diabetic that was told by the doctors that I needed to go on insulin. I refused and have been keeping my blood glucose under control with diet. I will try to keep adding recipes but I don't measure and constantly experiment to find good flavor with no grains and sugar, so it may take me a while before I write a recipe with measurements and pictures.
