Mix together lady’s finger, gram flour, rice flour, carom seeds, asafoetida and salt in a bowl. Heat sufficient oil in a kadhai.
Add 3-4 tablespoons water to lady’s finger mixture and mix till well coated. Add 1 tablespoon hot oil and mix well. Put the coated lady’s finger in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper. To prepare masala, mix together chaat masala, chilli powder and salt in a bowl.Sprinkle some masala on top and serve.
