Ingredients

  1. 250 gramslady’s finger (bhindi), ends trimmed and cut into thin strips
  2. 3-4 tablespoonsgram flour (besan)
  3. 2-3 tablespoonsrice flour
  4. 1 teaspooncarom seeds (ajwain)
  5. 1/4 teaspoonasafoetida (hing)
  6. to tasteSalt
  7. as requiredOil for deep-frying
  8. forMasala:
  9. 1 teaspoonchaat masala
  10. 1 teaspoonred chilli powder
  11. to tasteSalt

Steps

  1. 1

    Mix together lady’s finger, gram flour, rice flour, carom seeds, asafoetida and salt in a bowl. Heat sufficient oil in a kadhai.
    Add 3-4 tablespoons water to lady’s finger mixture and mix till well coated. Add 1 tablespoon hot oil and mix well. Put the coated lady’s finger in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper. To prepare masala, mix together chaat masala, chilli powder and salt in a bowl.Sprinkle some masala on top and serve.
