Chinese is my 2nd favourite cuisine after Indian so every time I’m bored with Indian food I make some Chinese for the family. Noodles are usually bland and this recipe using all Spices makes it taste delicious. It’s a wholesome dish with meat as well as veggies. Do try this recipe.

Ingredients

  1. For the noodles:-
  2. 3cakes Maida noodles
  3. 1 cupfinely chopped spring onion bulbs
  4. 1 cupthinly sliced cabbage
  5. 1 cupthinly sliced carrots
  6. 1 cupthinly sliced red capsicum
  7. 1 cupthinly sliced green capsicum
  8. 1 cupthinly sliced yellow capsicum
  9. 4green chillies vertically split
  10. 1 tbspred chilli powder
  11. to tasteSalt for veggies
  12. to tasteSalt for noodles
  13. as neededWater for boiling noodles
  14. as neededOil for sauteeing veggies
  15. 1 tbspsoy sauce
  16. 1/2 tspvinegar (optional)
  17. 2 tbspketchup
  18. 1.5 tbspgreen chilli sauce
  19. For the prawns:-
  20. 750 gmprawns
  21. 2 tbspbutter
  22. 2 tspgarlic powder
  23. to tasteSalt
  24. 1/2 tsppepper powder
  25. For the scrambled egg:-
  26. 2eggs
  27. to tasteSalt
  28. 1 tbspmilk
  29. 1 tspoil
  30. 1/2 tspTurmeric powder
  31. For garnishing:-
  32. as neededFinely chopped spring onion greens

Cooking Instructions

    Boil noodles until al dente (firm to the bite). Don’t over cook or it becomes mushy. Cool completely.

    Scramble the eggs and set aside on a plate.

    Clean and de-vein prawns. To a nonstick pan melt the butter. Add prawns and cook till the water runs clear. Add the salt and garlic powder. Fry on high flame until it gets crisp. Don’t over cook or it becomes chewy.

    In another larger pan add all the veggies and sautée them until crisp. Don’t make it mushy. Add salt to taste.

    In the same pan add the soya sauce, vinegar (optional), green chilli sauce, ketchup. Mix well.

    To the same pan add the cooked noodles, fried prawns and egg scramble. Add chilli powder and salt for the noodles according to taste. Toss well until sauces are evenly coated on the noodles.

    Garnish with spring onion greens. Serve hot noodles with tomato ketchup.

    The veggies here add extra taste. Alternatively you can use just the 3 colour capsicum with prawns and egg if other veggies aren’t desired.
