Ingredients

15 minutes
2 servings
  1. 480 ggnocchi,
  2. 80 greduced fat chorizo, cut into tiny cubes,
  3. 1small red onion, chopped finely,
  4. 1large clove garlic, chopped finely,
  5. 4heaped tbsp tomato & basil pasta sauce,
  6. 1/2 tspdried parsley,
  7. Spray cooking oil (sunflower or vegetable),
  8. Salt and pepper to season
  9. Quality Parmigianino Reggiano to grate over (optional)

Cooking Instructions

15 minutes

    Heat a large pan up and spray in some oil. Once hot add the onions. Fry gently over a medium heat until the onion just starts to turn translucent. Boil some salted water in a saucepan and add the gnocchi. Cook according to the packet instructions.

    Add in the chorizo and garlic with the onions. Season with salt and pepper. Stir to combine the ingredients. Fry for about three minutes.

    Drain off the gnocchi and then add it in with the ingredients. Toss everything together. Add the dried parsley and tomato and basil pasta sauce. Stir to combine.

    Cook for a couple of minutes then serve up. Grate over some cheese and enjoy! :)
