Pan-fried Garlic Chilli Broccoli

Hiroko Liston @hirokoliston
Dishwasher’s drainpipe was chewed by mice and leaking for a long time unnoticed. That’s why I have been cooking in the bathroom using a portable induction hob. The kitchen floor is not yet repaired and I miss my oven so much. If I’ve had an access to my oven, I wouldn’t have cooked this dish, however, I have found that this frying-pan method is easier and quicker than oven-roasting.
Cooking Instructions
- 1
Heat Olive Oil in a frying pan over medium heat, add Broccoli, Garlic, Chilli, Salt and Water, cover with a lid and steam-cook for a few minutes.
- 2
When the Water is evaporated, remove the lid and stir-fry until slightly browned.
- 3
Sprinkle with some Black Pepper and grated Parmesan, and serve.

How to Boil Broccoli
I love broccoli so I was trying out simple boiling methods. This method requires barely any water so it's more like steaming. With this method, you can really taste the difference in broccoli from varying regions and farms. Even my kindergarten-aged daughter could tell the difference.Steps 4-5: The amount of time to cook will vary depending on the size of the broccoli. If you want to use the broccoli in stew etc., then remove the lid right after stopping the heat. If you are making these for small children, then leave the lid on for 2 more minutes after turning off the heat. Recipe by Blue poppy

Spaghetti, Brie & Broccoli Frittata
I never use a whole head of broccoli as a side vegetable, so I always have some left in the fridge. It goes lovely with brie, makung a taste so good, even meat-mad people will go for it!

Pan-fried Cheese & Potato
When I was a financially challenged Uni student, I often cooked this cheese & potato snack using a mini toaster oven. However, a non-stick frying pan works better. If you don’t have a non-stick frying pan, you can place a sheet of baking paper in a frying pan, so that the melted cheese won’t stick to the pan. It’s a cheep but yummy snack, that brings back a memory of my Uni days.

Baked Broccoli with Bechamel, Egg, and Turkey Ham
Although broccoli season is from November to April, luckily, we can still enjoy it in May and June. My friend Juli shared this recipe with me. We've adapted it a bit because the original recipe steamed the broccoli, but we prefer the flavor when it's baked. At home, we usually make the BECHAMEL sauce, but if you don't want to complicate things, you can buy it pre-made. If you decide to make it yourself, you can see how we do it in the last step. The original recipe uses serrano ham, so if you prefer, you can swap one ham for the other. You can also use a whole broccoli and, instead of one egg, boil two. You would need to add a bit more diced ham. The result is spectacular 😋

Lotus Root Millfeuille with Garlic and Anchovy
I always make a big batch of burger patty mix and often use it as stuffing for various dishes.I love the combination of garlic and anchovy flavours and since they are popular, I posted this recipe.Follow the instructions and you should be able to easily make this dish. After several trials, I found the combination using a gas hob and oven is best for this recipe. At Step 10, cover with a lid and steam the contents of the pan. This way, you shouldn't need an oven. Adjust the heat according to your gas hob. Recipe by *ai*

Cauliflower Yellow Rice with Black Bean,Tofu, and Broccoli 🥦
I was thinking to make it with a brown rice. But my husband called me and told me that he was on his way home. That’s mean I have only about 10-15 minutes to prepare and make a dinner. That’s not enough time to cook brown rice in the short time.So instead of using brown rice, I replaced it with cauliflower rice. That makes it so much easier. This dish is very easy to make and also #oilfree and #lowcarbEasy simple dish, good for lunch or dinner idea, and super healthy.

Cauliflower Parmesan
Take it easy, take it easy. This is a really good recipe. It has great texture, great flavor and is very simple to make. I’ve seen recipes that call for flour egg and breadcrumbs on the slabs of cauliflower and then frying them. However I have done it that way and by just slicing the slabs, putting them on a bit of pizza sauce, more pizza sauce on top and sliced fresh lightly salted mozzarella. Having done it each of these ways, I don’t see the benefit of the added effort, time and mess of frying the cauliflowerA little bit of shaved Romano after you take it out of a 400° oven for 40 minutes, let it cool for 15 minutes and it’s really good. Excellent leftovers, even at room temperature.

Broccoli Raisin Slawlad
A less gloopygloppy version of that broccoli raisin salad that so many of us love. You can certainly add crispy bacon bits or Bacos if you like because I totally get that everyone thinks bacon makes everything better. ;)This makes 3 to 4 servings and is easily doubled. On the day I took this pic, I added a handful of julienned carrot, too.

Chicken and Broccoli Alfredo Stuffed Shells
A marriage of two delicious pasta recipes, stuffed shells and chicken alfredo. I usually cook a couple chicken breasts in the crockpot each week and shred them to have on hand for quick dinners/lunches, so that's what I used, but a rotisserie chicken would work good as well. I also use jarred alfredo, to make this dinner quicker to put together, but feel free to use homemade.

Mushroom Risotto – Rice Cooker Method
Recently I suffered from Sciatica pain and I still can’t keep standing up for long. But I am lucky because, when I am not well, I can benefit from electric cooking tools such as ‘Rice Cooker’. These days rice cookers are so smart and they can do many things. My rice cooker has ‘Quick Cook’ mode and it cooks Risotto just perfect ‘al dente’ better than I can. Have you ever tried Rice Cooker Risotto? If you are in doubt, you should try once.

Neapolitan Pizza in a Pan by Davide Civitiello
Among the various Neapolitan Pizza recipes published by world champion pizzaiolo Davide Civitiello, this one, cooked in a pan and then in the oven—a combo cooking method as he calls it—seemed the most intriguing and suitable for my means, as I don't have a pizza stone and peel to cook it directly in the oven.
