Sweet Chilli Fish Cakes

These are so incredibly easy to make! You can switch the ingredients to whatever you have in your cupboards! So if you don’t like spice use some fresh herbs instead! Instead of tinned fish why not make corned beef patties!! Add chilli for an extra kick!! It’s important that you make sure they are firm before cooking them too!

Ingredients

20 - 30 mins
2 people as a main
  1. 219 gramtinned wild salmon / or tuna
  2. 1 packetidohoan dried potatoes / or 400 grams of mashed potatoes/ 2 large baking potatoes flaked
  3. (300 ml boiling water only for the dried potatoes not for the mash)
  4. 2 tspcapers / optional or fresh herbs
  5. 1small can of sweetcorn drained
  6. 2 tbspsweet chilli sauce (optional)
  7. 3spring onions sliced
  8. Knobbutter optional
  9. 1 tbsplemon juice
  10. Salt and pepper
  11. 100 gramsbread crumbs
  12. Few tbsp of olive oil

Cooking Instructions

    Boil the kettle, in a large bowl add the mash potato powder. Add the butter optional, pour in the water give it a good stir. Or place the mash or inside of a baked potato and give it a good stir!

    Chop the spring onion, add it to the bowl then open the tin of salmon add it too, with the sweetcorn, capers, sweet chilli sauce, herbs and salt and pepper! Mix it all up.

    Make the fish cakes into 4 equal patties. Spray with oil and put the bread crumbs in a bowl and roll them into the crumbs coating well.

    Pour a few tablespoons of oil in a frying pan and on a medium high heat fry each side until golden and cooked all the way through!! Enjoy
