Ingredients

  1. 1 packetpani puris
  2. 1/4 cupBoondi soaked in water and squeeze (Store Bought)
  3. For pani
  4. Halfcup coriander leaves
  5. Halfcup mint leaves
  6. 4-6green chilles
  7. Halfinch ginger
  8. 2spn chat masala
  9. 1spn black salt
  10. 1 cupboiled tamarind water
  11. 2-4 cupswater
  12. For sweet pani
  13. 1 cuptaramind
  14. Halfcup jaggery
  15. 1spn cumin seeds
  16. to tasteSalt
  17. Halfspn red chilli powder
  18. 1 cupwater
  19. For Ragda
  20. 1 cupwhite peas/ vatana
  21. Halfspn tumeric powder
  22. 1spn oil for tadka
  23. Halfspn cumin
  24. 1potato cutted in small pieces
  25. 1 cupwater
  26. Salt to salt

Cooking Instructions

    For making Pani Puri Ka Pani: Add all the ingredients except water to a blender and blend. Add little water and blend to a fine paste. Transfer the paste to a bowl and add the remaining water. Mix well. Check salt and spice. Add water if needed. Garnish with boondi and refrigerator before serving. This pics of sweet pani. Mix all ingredients add 1cup of water and boil for 5mins then Sieve.

    Soaked peas 8-10hours.In a pressure cooker, add the soaked white peas/vatana with turmeric powder, cutted potato and salt. Add water and mix well. Pressure cook for 10 minutes on medium flame. The ragda should not be very thick nor watery. Just slightly thick. Adjust it's consistency. Check the seasoning. Add the amchur powder to the hot ragda and give tadka of cumin seeds. Use this ragda for filling for the Pani Puri.

    To serve Ragda Pani Puri: Arrange the puris in a plate with some ragda, and a bowl of pani. Make holes in the puris. Stuff it with 1 tbsp hot ragda and dip it in cold pani and enjoy.
