Galangal is very aromatic when use it to braised meat or duck. Braised with soy sauce and sugar to get the salty sweet taste and a hint of galangal fragrance. I dont have duck for today, so I use spare ribs.

Ingredients

4 servings
  1. Spare Ribs
  2. Marinade
  3. 1 tbspsoy sauce
  4. 1 tspwhite pepper
  5. Ingredients A
  6. Chopped shallots
  7. Chopped garlic
  8. Sliced galangal
  9. 1cinnamon stick
  10. 2star anise
  11. Sauce Ingredients
  12. 3 tbspsoy sauce
  13. 1 tbspdark soy sauce
  14. 1 tbspsugar
  15. 1 tspsalt
  16. 1/2 tspwhite pepper

Cooking Instructions

    Marinate meat for 1 hour.

    Sitr fry Ingredients till aromatic. Add in meat and stir fry for a while.

    Add in sauce ingredients and let the sauce coat the meat. Place everything in a slow cook pot.

    Add in water just cover the meat. Heat up till boiling and lower down heat and simmer for 1 hour till meat is soft. Garnish and serve.
