Patience & Vigilance are two key points to get a good crunchy fried item. Patience:heat oil at medium flame to get proper temperature for frying,DO NOT turn to high heat,bring oil to boiling point & then lower flame.Check the temperature by dropping little piece of bread in oil,if it pops up at surface & not sink in bottom,oil is at right temperature.slide items in oil,DO NOT plop items from high above.it will result in splashing of hot oil & also might touch or disturb other previous item.let the item fried from one side then turn to other,DO NOT splash spoon too much in oil.sometime spoon ruptures or spoil the soft items inside oil.
Vigilance:keep an eye on wok,DO NOT turn back while frying because in blink of eye item turns from golden to brown then dark brown.DO NOT do any water work near hot oil on stove.just a tip of drop would make hot oil splash a lot.

Cooking Instructions

Mix all dry ingredients.make well in centre,add oil.mix. knead soft dough with water more or less 1/4 cup -1/2 cup.cover the dough & give rest for 1 hr

Make small round balls of dough(pairy) & again cover give rest for 15 min

Keep oil at medium flame roll out each ball in small round roti shape not too thin. Make sure oil is hot, add kachori in hot oil.it will pop up to surface itself

When golden from one side turn to other.some kachori will puff up some may not.take out from oil & keep at kitchen towel

Enjoy crispy kachori with aloo tarkari and achar.enjoy
