Ingredients

  1. 2 cupscauliflower florets
  2. 4 tbspall-purpose flour
  3. 2 tbspcornflour
  4. 1 tbsprice flour
  5. 2 tbspginger garlic paste
  6. 1 tspKashmiri red chilli powder
  7. 1 tspgaram masala
  8. 3 sprigscurry leaves finely chopped
  9. 1 tspsalt
  10. as neededOil for deep frying
  11. For garnish
  12. 3green chilies
  13. 2 Springscurry leaves

Cooking Instructions

    To begin, take the cauliflower florets in a large bowl. Pour over boiling hot water until the florets are well covered. Add a tsp of salt and keep aside for 8-10 minutes. Once the florets are blanched, drain the florets and keep aside.

    In another bowl, add in the all-purpose flour, cornflour, rice flour, and ginger garlic paste.

    Add in garam masala, red chilli powder, salt, and finely chopped curry leaves.

    Now add in the florets and mix. Add in enough water and mix until the batter coats the florets. Check the salt and add more if required.

    Heat oil for deep frying. Fry the cauliflower florets until they are golden and crisp.

    The Gobhi 65 is ready to serve. Garnish with de-seeded, slit and fried green chillies and fried curry leaves.
