Ingredients

2 people
  1. 1small onion
  2. 2 clovesgarlic
  3. 1 tspground cumin
  4. 1 tspsmoked paprika
  5. 1 tbspharissa paste
  6. 400 gcanned tomatoes
  7. 225 gsmoked tofu
  8. 150 gspinach

Cooking Instructions

  1. 1

    Chop the onion and the garlic and add to a pan with a little olive oil.

  2. 2

    Once softened add the spices and harissa paste and mix well.

  3. 3

    Once fragrant add the tomatoes and cook for 10 mins or so, aiming for a thick sauce.

  4. 4

    Once the tomatoes have reduced crumble in the tofu with your hands.

  5. 5

    Add spinach and cook until wilted.
