From the streets of City of Joy, Kolkata comes this lip- smacking morning breakfast recipe, Club Kachori Sabzi!
It also makes a fantastic Sunday Brunch!
The urad filled deep fried crispy kachoris is served along with flavour packed panchporan ( 5 spice mix from Bengal ) alu sabzi, makes this dish an absolute cracker!
This recipe is very close to my heart and took me 1.5 years to master it. Preparing this dish always takes me back to the lanes of Kolkata, a place where I spent my childhood, hence it is one of my COMFORT FOOD!
Staying away from the city made me miss this Soul Food, hence urged me to come with a recipe that matches the taste similar to that of Kolkata.

Ingredients

  1. INGREDIENTS FOR THE KACHORI~
  2. 350 grmsMaida
  3. 100 grmsSooji
  4. 100 grmsUrad Dal (Soaked in water for 4hrs)
  5. 2 TbspDhaniya Saunf Mix(Roasted and pounded Coarsely)
  6. 1 tspHing
  7. 1 tbspBaking Soda
  8. 1 tbspSalt
  9. 1 cupwater to Knead the dough
  10. as required Oil for Frying
  11. ingredients for the aloo sabzi
  12. 6-7Boiled potatoes
  13. 1/2 tspIngredients for Panch Phoran Spice Mix Saunf
  14. 1/2 tbspSarson (black mustard seeds)
  15. 1/2 tspJeera
  16. 1/2Methi dana
  17. 1 tbspKalonji.Mix them all together to get the Panch Phoran Spice
  18. 1 tbspPepper powder
  19. 2 tbspDhaniya powder
  20. 2 tbspSabzi Masala
  21. 1 tbspKashmiri Red chilli powder
  22. 1/2 tspHing (Asafoetida)
  23. 3 inchGinger (finely chopped)
  24. 2Bay leaves
  25. 1-2Green Chillies (finely chopped)
  26. 2 tbspCoriander leaves (chopped finely)
  27. 2 tbspOil
  28. as per taste Salt

Cooking Instructions

    METHOD FOR KACHORI DOUGH~
    In a parat or a bowl bring all the contents of the dough together, maida, sooji, baking soda, dhaniya & saunf mix, hing and salt. Knead a soft dough using 1 cup water or a little more if required.

    Flatten the dough and apply 2 tbspn of water by digging in pits with your finger. Cover the dough with a wet muslin cloth. (This process is done to avoid drying of the dough. Sooji swells up and hence requires a little extra water to keep the dough soft.)
    Let the dough rest for 1 hour.

    METHOD FOR URAD DAL FILLING~
    Strain all the water from urad dal. And put it in a blender. Add salt and grind it into a coarse paste. (Without adding any water.)
    Empty its contents in a bowl and keep it aside.)

    METHOD FOR ALOO SABZI~
    In a deep kadai, heat 2 tbspn oil, put two bay leaves, Panchporan spice mix and chopped ginger. Saute this till ginger is slightly cooked.

    Now add all the spices. Hing, pepper, kashmiri chilli powder, sabzi masala & dhaniya powder. Saute this for about 30 secs.

    Add the roughly chopped potatoes and mix it well till the spices have coated the potatoes beautifully.

    Now put 1½ cup water and let it simmer in low heat for about 3 to 4 minutes. Add kasuri methi and freshly chopped coriander leaves.

    METHOD FOR PREPARING THE KACHORI WITH URAD DAL FILLING~
    Take small portion of the dough. About 1" in daimeter. Press it from the edges to make it into a katori shape. Put about 1tspn of urad dal paste and seal by bringing the edges together.

    Roll out the kachoris into small discs. The kachori should be 3mm thick. Prepare all the kachori balls in the same way. Now heat oil in a kadai and fry the kachoris on medium low heat.

    Fry till it gets a crisp and beautiful golden colour. Remove on a tissue paper to drain out excess oil.

    Serve hot with Aloo sabzi and pickle. Enjoy this Sunday Special Soul Food with family and friends.
