Ingredients

  1. 400 gmVermicelli
  2. 1 tspSalt
  3. 2-3 tbspOil
  4. 1 tspBlack Mustard Seeds
  5. 1 sprigCurry Leaves
  6. 2-3Garlic minced
  7. 1Capsicum diced
  8. 2Tomatoes chopped
  9. 1 cupFrench beans chopped
  10. 1 cupshredded Cabbage
  11. 1/2 cupchopped Carrots
  12. 1/2 cupGreen Peas
  13. 1 cupCauliflower florets
  14. 1Onion chopped
  15. 1 cupSpring Onions chopped
  16. 2-3Green Chillies chopped
  17. 1small bunch chopped Coriander Leaves

Cooking Instructions

    Heat oil in a cooking pot. Add mustard seeds and curry leaves. After they stop spluttering, add dry red chillies. Also add garlic mince to it. Saute all that for a minute.

    Add green chillies or red chilli flakes now. Add the finely chopped veggies now. Saute them on a medium high heat and do not cook much. Cover and cook for 6 to 7 minutes only until the raw smell disappears. Add water to it accordingly. Do not add more. Bring it to a rolling boil. Now add Vermicelli. Stir in with a wooden spoon and be gentle.

    Simmer for about 5-8 minutes. Garnish with chopped coriander leaves. That's it. It's done. Serve it piping hot to your loved ones with any chutney of your choice or as it is.
