Ingredients

  1. For making Bhaji. -(veggies gravy)
  2. 3potetoes (250gm)
  3. 1 cupchopped cauliflower (120gm)
  4. 1 cupchopped carrots
  5. 1 cupgreen peas (fresh / frozen)
  6. 1/2 cupchopped french beans (12-14)optional
  7. 2.25 cupwater (for presser cooking veggies)
  8. Other Ingredients -
  9. 3 spoonbutter-salted /unsalted
  10. 1 spooncumin seeds
  11. 1/2 cupchopped onion
  12. 2 spoonginger garlic paste
  13. 1 spoonchopped green chilli
  14. 2 cupchopped tomatoes
  15. 1 spoontermiric powder
  16. 1 spoonred chilli powder
  17. 2-3 spoonpav bhaji masala /as required
  18. 1.5-2 cupwater /cooked veggies stock
  19. as requiredSalt
  20. for serving -
  21. 12-15pav
  22. 3-4 spoonbutter
  23. As Requiredlemon chopped in wedges
  24. 1onion finely chopped
  25. 3-4 spoonfresh green coriander leaves
  26. 2-3 spoonbutter for topping
  27. 1/2 cupchopped green capsicum

Cooking Instructions

    Rinse peel and chopped veggies (if you like you should take another veggies also)

    Add all chopped veggies in 2 litre presser cooker add green peas add 2.25cup water presser cook for 5-6whistles when presser settle down on its own open lid check veggies cook completely.

    Heat pan add 2-3 spoon butter add cumin seeds when they crackers add chopped onions saute till transfer add ginger garlic paste saute add green chilli add chopped tomatoes saute till become soft.

    Butter should b releasing from sides add chopped green capsicum saute don't be overcook.

    Add turmeric powder red chilli powder pav bhaji masala add cooked veggies drain from water. Add all stock from cooker or add water salt. With the masher start to mash veggies direct in pan.

    Stir and simmer for 8-10min. If needed add water. Countisency should be neither thick nor thin.

    For roasting pav-
    Heat the tawa add butter spread it add pav bhaji masala mix it put on pav rotate it all over melted butter. Serve hot with top it up butter chopped onion green coriander leaves lemon wedges.
