I came up with recipe for cake salé that those with wheat or gluten allergies can eat.

For gluten-free flour, I recommend the following: 1/3 cup tapioca flour, 2/3 cup katakuriko, 2 cups brown or white rice flour, and 1 teaspoon xanthan or guar gum (if available). This recipe uses only 375 ml, so you will have some leftover. Recipe by Maxerbear

Ingredients

  1. 1 tbspOlive oil
  2. 1000 mlYour choice of vegetables (zucchini, onion, bell peppers, etc.) chopped
  3. 1 dashSalt and pepper
  4. 1 dashVegetable oil or butter to grease the pan
  5. 200 gramsRice flour or other gluten-free flour
  6. 2 tspBaking powder
  7. 1/2 tspSalt
  8. 3Eggs
  9. 100 mlMilk or soy milk
  10. 100 mlPlain yogurt
  11. 30 gramsGrated cheese
  12. 1 tbspGrated cheese for topping
  13. 1 tbspYour choice of fresh herbs (optional) (I use tarragon)

Cooking Instructions

    Heat oil in a frying pan, sauté the vegetables until tender, then season with salt and pepper. If using herbs, they should be added at the end.

    Grease the pan with oil or butter and preheat the oven to 180℃.

    Combine the flour, baking powder, and salt in a bowl, and mix.

    Break the eggs in a smaller bowl, beat, then add to the flour mixture from Step 3.

    Mix in the milk or soy milk, yogurt, and grated cheese.

    Add the sautéed vegetables, and lightly mix.

    Put the batter in a mold, then evenly sprinkle grated cheese on top.

    Bake for 45 minutes in oven.

    Once it slightly cools, remove the cake from the mold to cool, add a touch of love and gratitude, slice, then serve.
