Ingredients

12 Cutlets
  1. 2 Tbspcooking oil
  2. 1 Tspcumin seeds
  3. 1/3 cupchopped onion and spring onions
  4. 1.5 Tspchopped ginger
  5. 1.5 Tspchopped green chillies
  6. 1carrot chopped
  7. 1/4 cupchopped french beans
  8. 1/4 cupchopped beetroot
  9. as per tasteSalt
  10. 1 Tspcoriander powder
  11. 1/3 Tspturmeric powder
  12. 1red chili powder
  13. 1 Tspamchur powder
  14. 1 TbspPav-bhaji masala powder
  15. 1/4 cupparboiled green peas
  16. 3medium potatoes boiled and mashed
  17. 2 Tspfresh coriander
  18. 1/2 cupbread crumbs
  19. 4 Tbspcornflour slurry
  20. as required Oil for shallow fry

Cooking Instructions

    Heat oil, add cumin seeds and allow to splutter. Add chopped onions, ginger and green chillies. Saute for two minutes on low flame.

    Mix carrot, beans and fry till half done. Now mix beetroot and saute till colour change.

    Now add salt, turmeric, chilli powder and amchur powder. Mix well with veggies. Add green peas, mashed potatoes and mix.

    When cool down a bit, add pav-bhaji masala, green coriander and 2 Tbsp bread crumbs.

    Mix all and make cutlets. Dip all sides of cutlets in the cornflour slurry prepared.

    Then dip in rest of the bread crumbs. Heat oil on a pan. Shallow fry/deep fry according to choice from all sides till the Cutlets are crispy and well cooked.

    Serve the crispy delicious beautiful railway Veg Cutlets with tomato sauce and enjoy.
