Ingredients

  1. 1 large size potato peel and cube
  2. 1/4 cup carrot cube
  3. 1/4 cup green peas
  4. 1/4 cupchopped red,green,yellow capsicum
  5. 2 tbschopped beet root
  6. 1/4 cupchopped cauliflower
  7. 1/2 cupbreadcrumbs
  8. 1 tbsginger chilli paste
  9. 1/4 cup finely chopped spring onion
  10. 1/4 cupfinely chopped coriander
  11. 1 tspcoriander seed powder
  12. 1/2 tsp cumin seed powder
  13. 1/2 tsp chat masala
  14. 1/2 tsp amchur powder
  15. 1/2 tspred chilli powder
  16. 1 tspsalt (as required)
  17. Oil for deep frying
  18. 2 tbsp corn flour
  19. 4 tbsp water
  20. 1/4 tspblack pepper powder
  21. 1/4 tsp salt

Cooking Instructions

    Steam, boiled the vegetables or pressure cooked all vegetables.

    Drain off the vegetables and let it cool down. Mash the veggies well.

  3. 3

    Add bread crumbs, ginger chilli paste, finely chopped spring onion and coriander leaves, coriander seed powder,cumin seed powder, chat masala, amchur powder, red chilli powder and salt. Mix well.

    Add more bread crumbs if required. Dough must be non sticky. Keep aside.

    Now take cornflour powder in a bowl. Add enough water to make batter. Batter should be slightly thin.

    Now make thick cutlet. Deep each cutlet in a batter and place them on bread crumbs.

  7. 7

    Heat the oil in a pan on low flame. Deep fry in hot oil till it becomes golden brown and crisp.

    Drain veg cutlet on tissue paper to remove excess oil.

  9. 9

    Serve veg cutlet with sauce or green chutney.
