Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh. This recipe is packed with protein rich carbs.

Ingredients

  1. 1 CupSoya Nuggets (Soaked)
  2. 11/4 Cup Basamati Rice (Soaked)
  3. 1 TSPCumin Seeds
  4. 1/2 TSPRed Chilli Powder
  5. 1/4 TSPTurmeric Powder
  6. 1 TSPCoriander Powder
  7. 1/4 TSPGaram Masala
  8. 1Bay leaf
  9. to tasteSalt
  10. 2 TBSPOil
  11. 1/2 TSPGinger Grated
  12. 1Tomato Finely Chopped
  13. Handfulfresh coriander leaves

Cooking Instructions

    Boil soya nuggets in 1 cup water and salt for 2-3 minutes. Heat oil in a pressure cooker, add cumin seeds and bay leaf, sauté till light brown.

    Add soya nuggets, tomato & sauteed.Add salt, turmeric powder, red chilli powder, coriander powder, ginger, garam masala powder and mix well.

    Drain & add basmati rice and mix well. Add 2 cups water & cover the till 2-3 whistles are given out. Reduce heat and simmer for 2-3 minutes.Open the cooker when pressure reduces completely and serve hot with Bundi raita or curd & salad.
