This potato-tomato curry is authentic sabji of uttar pradesh. It goes very well with roti n rice, also puri, paratha, kachori, kulcha, etc. Tastes yummy..
In hindi we used to call it " Tamatar-aloo ki sabji" Its all time favorite sabji when there is no other green vegetables and don't want to spend much time in kitchen.

Ingredients

  1. 4-5potatoes
  2. 1onion
  3. 2tomatoes
  4. 1green chilli
  5. 5-6garlic cloves
  6. 4-5curry leaves
  7. 1 tbspoil
  8. 1 tspmustard+cumin seeds
  9. 1 pinchhing
  10. 1 tspred chilli powder
  11. 1 tspcoriander powder
  12. 1/2 tspturmeric powder
  13. 1 tspgaram masala
  14. As Per TasteSalt
  15. As required Water
  16. As RequiredFresh coriander leaves

Cooking Instructions

    Boil potatoes and roughly break them using hands. Chopped other veggies too. Keep everything ready.

    Put a pan to heat, add oil, hing and mustard+cumin seeds. Let them splutter. Now add onion, chilli and curry leaves. Saute them. Now add masala and then add tomatoes and salt. Cook everything well and let the tomatoes become mashy. Now add potatoes and saute well.

    Its time to add required water and let it boil on medium heat for 5 minutes. Now add garam masala and coriander leaves and mix it well. Its ready to serve. Enjoy it hot with roti and rice.
