Cooking Instructions

Use a fork to scrape the surface of the fish to remove scales. Place a knife between the head and body of the fish and remove the gills, as shown in the photo below. The gills have an odour and should be removed in the preparation process. (This fish has already been gutted, but please gut it has't done yet.) Sprinkle some salt on the surface and inside the fish belly.

Chop the spring onions. Stuff the belly with the spring onions and ginger (either sliced or grated).

Place the fish in a plate and put it in the steamer. Under the strong heat, steam it for 10-15 mins.

While steaming, prepare the sauce. Add water, chicken stock soup, fish sauce, oyster sauce, soy sauce in a pan.

Once the fish is steamed, pour the sauce and have some coriander leaves on top!

You could also use striped pigfish or sea bass in place of sea bream.When you boil down the balsamic vinegar, it thickens and becomes sweet. In order to thicken it even further, I added browned butter. I recommend using fresh sea bream if possible! Since you are frying the skin-side twice, it becomes crispy and fragrant.
