  3. 1 1/2 cupBoiled Full Cream Milk
  4. 3/4 cupOrganic Sugar (adjust to taste)
  5. 1/2 tspCardamom Powder
  6. Generous Pinch of Saffron
  7. 20Pistachios (whole)
  8. 15Almonds (whole)
  9. 15Cashew Nuts (halved)
  10. 12Almonds (thinly sliced)

Cooking Instructions

    Roast the nuts:
    Heat ghee in a pan over low flame. Roast almonds, cashew nuts, and pistachios separately until golden. Set aside.

    Prepare saffron milk:
    Soak a generous pinch of saffron in boiled milk and set aside.

    Cook the carrots:
    In the same pan, add grated carrots to the remaining ghee. Roast on medium flame for 10 minutes, stirring continuously.

    Simmer with milk:
    Pour the saffron-infused milk into the pan. Cook until the milk is fully absorbed, stirring frequently.

    Sweeten it up:
    Add sugar and mix well. Continue cooking until all moisture evaporates.

    Sprinkle cardamom powder, saffron and sliced almonds and mix before turning off the flame.
