I love this dish, tried it firs time in Ootoya restaurant. Wanted to recreate it at home so tried different recipes for for sweet sour chicken. This on is exactly same as you get in Ootoya. Give it a try.

Ingredients

  1. 2chicken thighs
  2. 3midium potato
  3. 2midium size lotus root (rencon)
  4. 1/2carrot
  5. 1/2onion
  6. 1/2bell pepper (green/ red/ yellow) or mix
  7. 1/2 cuppotato/ corn starch
  8. Oil
  9. For Marinade
  10. 2 tbssoy sauce
  11. 1 tbscooking sake
  12. 1 tspginger garlic paste
  13. For Sauce
  14. 4 Tbspgranulated sugar
  15. 3 Tbspapple cider vinegar
  16. 2 Tbspsoy sauce
  17. 1 Tbspmirin
  18. 1 Tbspwater
  19. 1 Tbspsake
  20. 2 tsppotato/corn starch

Cooking Instructions

    Combine all ingredients for marinade in a large bowl.

    Clean and cut chicken in bite size pieces and add them to the marinade. Keep aside in refrigerator for 10-15 min.

    Combine all ingredients for sauce making sure no lumps are formed.

    Dice Onion, potato, carrot and bell pepper. Slice lotus root in rings. As potato and carrot takes time to cook, boil them for 10 min or until they are tender. Shallow fry all vegetables until they are tender. Do not crowd lotus roots as they become sticky before getting cooked.

    Take marinated chicken, coat in starch and deep fry until it becomes golden brown. Drain excess oil with paper towel.

    Combine vegetables and fried chicken in a pan, heat them evenly and pour sauce over. Keep tossing, this will thicken sauce n create even coat on chicken and vegetables.

    If you like garnish with coriander and serve.
