Ingredients

  1. 1 cupleftover cooked rice
  2. 1potato boiled
  3. 1carrot grated
  4. 1/2capsicum chopped finely
  5. 1small onion chopped finely
  6. 1 inchginger grated
  7. 3green chillies chopped finely
  8. 2-3 tbspchickpea flour / Gram Flour/ Besan
  9. 2 tbspcoriander chopped finely
  10. 1/4 tspturmeric powder
  11. 1/4 tspred chilli powder
  12. 1/2 tsproasted cumin powder
  13. 1/2 tspgaram masala powder
  14. 1/4 tspamchoor powder
  15. 1/2 tspsalt or to taste
  16. 1/2 tspsugar (optional)
  17. 1 tspchaat masala
  18. 2 tbspcornflour
  19. 2 tbsprefined oil or as needed

Cooking Instructions

    Take a mixing bowl. Add cooked rice, boiled and cubed potato. Mash well with a masher or with hands. Add grated carrot and ginger, finely chopped onion, capsicum,chopped green chillies, coriander leaves. Now add amchoor powder, chaat masala,turmeric, red chilli powder,cumin powder,garam masala, salt and sugar to taste.Add chickpea flour (besan), and mix it well with your hands to combine well.If the dough is moist add more gram flour or cornflour and knead to a tight smooth dough.

    Smear oil in your palms and divide dough into lemon sized balls (approximately 10).Flatten it between your palms and make round shaped cutlets/ tikki.Heat 2 tbsp oil in a deep frying pan.Dust each tikki in cornflour.Shake off excess flour. Place few tikkis at a time on heated oil and shallow fry them on medium heat flipping,till golden brown on all sides.

    Remove the cutlets/ tikki on absorbent paper.Once done, serve hot these golden fried Leftover Rice Cutlets or Tikki with Hot and Sweet Tomato Sauce or Green Chutney and relish!
