I make tater tot casserole occasionally and it's one of my hubby's favorite quick dishes. I wanted sloppy joes, but we didn't have any buns and I realized we were out of bread so I figured why not make a twist on one of our favorite casseroles. The beans were added on a whim. Turned out delicious.

Ingredients

6 servings
  1. 1 lbground beef or ground turkey
  2. 1 canpork and beans - drained
  3. 1 cancondensed tomato soup
  4. 2 tbsbrown sugar
  5. 2 tspdijon mustard
  6. 1 tspapple cider vinegar
  7. 1 tspworcestershire sauce
  8. 1 tspminced garlic
  9. 1/2 tspseasoned salt
  10. 1 bagfrozen tater tots (will probably not use all)
  11. several slices American cheese (optional)

Cooking Instructions

    In a medium skillet over medium high heat crumble and brown ground beef until no pink remains, adding minced garlic and seasoned salt as it cooks.

    When fully cooked drain fat off ground beef in a colander. Return to skillet over medium heat. Add baked beans, soup, brown sugar, mustard, vinegar, and worcestershire sauce. Stir to combine. Simmer uncovered until sauce thickens, stirring occasionally. About 10-15 minutes.

    Transfer mixture to a medium casserole dish. Top with cheese (optional) then a single layer of tater tots. Bake in preheated 425°F oven for 20-25 minutes or until tots are golden and crispy. Let rest 5 minutes before serving and enjoy!
