Add Cooksnap

20Tomatillos
1 bunchCilantro
1 cupRed tomatoes or cherry tomatoes
1/2 eachRed onion
1Lime
2Jalapeños
1Salt
1Pepper
1Garlic Salt
1Crushed red pepper

Cooking Instructions

Peel the leafy like cover on the tomatillos and wash off the sticky substance.

Chop in very small pieces or use a food processor - onions, jalepeños, cilantro combine into a bowl.

Cut tomatillos into fours and add to food processor or blender and blend until liquified.

Squeeze full lime into the blended tomatillo
5

Add mixture of onions, jalepeños, and cilantro to the blended tomatillos
6

Chop cherry tomatoes or whole tomato and add to blended tomatillos
7

Add garlic salt, salt & pepper to taste mix well
8

Serve with corn chips

We took a trip to Cabo San Lucas for our honeymoon 5 years ago and a restaurant had this salsa that I loved. When we got home I kept trying to replicate it. It took some time but I think I finally mastered it. I used to boil the tomatillos to soften them but roasting them added flavor and made it that much better.

This is a classic salsa verde recipe with roasted veggies and peppers. It is heavy on the garlic as are many of my salsa recipes but it goes so well with verde sauces.
