This recipe has been around since I was a kid. Even tho I've made some of the most expensive mac & cheese recipes - this is what my Foster kids crave. Especially when they're sick.

This recipe typically feeds 4 children or, 2 adults.

Ingredients

  1. Cheesy Macaroni
  2. 2 cupDry Elbow Macaroni [+ water + dash salt & oil]
  3. 1 1/4 cupVelveeta Cheese [small cubed - room temp]
  4. 1/3 cupWhole Milk [slightly warmed or room temp]
  5. 2 tbspButter Or Margarine [or more - room temp]
  6. Options [or, to taste]
  7. 1/4 tspBlack Pepper - Salt - Dry Mustard
  8. Optional Sides
  9. 1 dashHot Sauce

Cooking Instructions

    Bring quart of water to a boil. Add a 1/4 teaspoon salt and a dash of oil to the water.

    Add macaroni to boiling water.

  3. 3

    Bring water back up to a boil and boil macaroni for 9 to 11 minutes. Or, as per manufacturer's directions.

    Drain macaroni in a strainer. ° Tip: When draining macaroni in a strainer - don't just dump everything quickly into the sink. If you do, the hot water will quickly fill your drain and come back up to touch your noodles. Oh so gross! Just go slowly. :0)

    Place macaroni back in boiling pot and add all room-temperature ingredients. Set your stove burner to low. Stir constantly until all ingredients are melted. Add additional butter and 1/4 cup less cheese if you enjoy a smoother mac & cheese dish. But, thicker is easier for little hands to eat!

    Serve immediately. Enjoy!
