Sweet Thai Chilli sauce is my most favourite condiment. I use it on absolutely everything so it's cheaper to make my own than to keep buying bottles of it every week. I have a few variations of it that I use for specific recipes but this is my basic go-to everyday version

Ingredients

  1. 3 clovegarlic, finely chopped
  2. 2hot red chilli peppers, finely chopped with seeds
  3. 180 mlwater
  4. 100 gramsgranulated sugar
  5. 60 mlcider vinegar
  6. 1/2 tspsalt
  7. 1 tbspcornstarch / cornflour

Cooking Instructions

    Put the water, sugar, vinegar and salt in a small saucepan and bring to the boil

  2. 2

    Add the garlic and chillies and turn down to a simmer for 3 minutes

  3. 3

    Mix the cornstarch with 2 tablespoons of water to make a slurry then stir it into the pan

  4. 4

    Let cook for a further 2 minutes until the sauce is thickened, syrupy and clear

  5. 5

    Let cool then pour into a sterilized jar, large enough to hold around 240mls / 1 cup

  6. 6

    Keep in the fridge for up to 3 months

  7. 7

    Enjoy with chicken, fish, spring rolls, fries/chips etc
