Ingredients

  1. 1 cup(2 sticks) butter, softened
  2. 1 cuppowdered sugar, divided (1/2 cup)
  3. 1 tspvanilla
  4. 2 cupflour
  5. 1 cupfinely chopped pecans

    Perheat oven to 350°F. Beat butter, 1/2 cup powdered sugar and vanilla in large bowl with electric mixer on medium speed until light and fluffy

    Gradually add flour and pecans, beating on low speed after each addition until well blended

    Shape dough into 1 inch balls. Place 1 1/2 inch apart, on ungreased baking sheet.

    Bake 12 - 15 minutes or until bottoms of cookies are lightly brown. Cool 5 minutes on baking sheet.

    Roll warm cookies in remaining 1/2 powdered sugar until evenly coated; place on wire rack. Cool completely. Store in air tight container at room temperature.

When I make these, I usually "double-dip" or roll them twice... first when they come out of the oven and again after they've cooled. Just a thought! 😏
