Ingredients

  1. 1/4 cup barnyard millet/Samak ke chawal /Moraiyo
  2. 1/2 litrefull cream Milk
  3. 8 strandsSaffron
  4. 2 dropskewra essence
  5. 1/3 cup Sugar
  6. 1/2 teaspoonghee
  7. 5 Almonds blanched and chopped
  8. 5Cashew nuts chopped
  9. 10Raisins
  10. 1/4 teaspoon Green cardamom powder
  11. 1 teaspoongreen pistachios chopped

Cooking Instructions

    Wash the samak rice well and soak in enough water for at least 30 minutes.

    Soak saffron in 1 teaspoon milk in a small bowl.

  3. 3

    After 30 minutes, drain all the water from rice and sauté in 1/2 teaspoon ghee in a shallow pan on medium flame.

    Heat the milk in a heavy bottom pan and bring to a boil.

    Add roasted rice to it and cook on low flame, while stirring continuously.

    Cook for about 15 minutes or till samak rice becomes soft and mushy.

    Keep scraping the sides of the pan.

    Add sugar, chopped nuts, raisins, cardamom powder, kewra essence and saffron milk and mix well.

    Cook for another 2-3 minutes or till kheer thickens slightly.

    Finally switch off the gas.

    Garnish with pistachios and saffron strands and serve hot or warm or chilled as per the choice.
