I got inspired by a meal my big sister shared with me of a pumpkin porridge she made and how delicious it was. So i asked for the recipe and off i went to get the ingredients 😁.

Ingredients

  1. 3medium sized pumpkins
  2. 1small Yellow bell peppers
  3. 1small Red bell peppers
  4. 1small Green bell peppers
  5. 3Scotch bonnet peppers
  6. 1medium onions
  7. 1 tablespoonCurry powder
  8. Salt
  9. 1/2 teaspoonGarlic
  10. 1 teaspoonGinger
  11. 1small Green peas
  12. 1large Carrot
  13. Seasoning
  14. 1/4kilo beef

Cooking Instructions

    Rinse and Peel pumpkin skin then scoop out the seeds and dice the pumpkin flesh and put in a pot with little water and salt

    In a separate pot, season beef with garlic, ginger, onions, salt and some seasoning cubes and cook until tender

  3. 3

    Dice the vegetables and set aside

  4. 4

    Boil pumpkin for 3-4minutes until a bit tender

  5. 5

    Pick out the cooked meat from the meat stock and blend with a blender roughly then add back to the meat stock (you can decide to use minced meat instead)

    Add the diced vegetables and stir

    Pour in the pumpkin

  8. 8

    Stir and taste for seasoning and cover to cook until the juice is almost dried up. Or you can decide to pour into a baking pan and bake in the oven until water is dried up
