East African Breakfast Platter East African Breakfast Platter
#nonindian - This is a typical East African breakfast menu that are very popular. On this platter you will find MANDAZI, a deep fried doughnut which is the most favourite of all. It is generally served with tea or chai in the Swahili lingo. The other dish is UJI WA WIMBI, a porridge made of millet flour. Next comes NDUMA (Arrowroot) & SWEET POTATO, that are boiled and shallow fried. So the locals generally start their day with either of these dishes or as preferred. All in all a healthy breakfast to kick start a day. Bethica Das -

Mango Daliya/ Mango porridge Mango Daliya/ Mango porridge
Mango Dalia is a sweet porridge made with broken wheat, milk and mangoes. My mother used to make this sweet porridge for breakfast and I used to save some and had it after dinner as a dessert. It is a great way to use mangoes which are very healthy and nutritious. I don't use any sweetner for this Dalia as mango puree provides the sweetness and creamy texture as well. But sometimes the mangoes are not sweet enough and you have to add a little sugar or any other sweetner to enhance the taste. This porridge is a great way to start your day. Broken wheat provides all the benefits of a grain, mangoes provide the nutrients of a fruit and milk is a great source of calcium and protein. Together they make a complete healthy breakfast meal. It is good for growing kids also. This one pot meal can be prepared in advance and can be kept in the refrigerator for 6-7 hours. It tastes best when served chilled. #CookClick Sumeet Kaur (Recipes and more by Sumi) -
Hawaiian Malasada Hawaiian Malasada
My husband and I tried to recreate the malasada that was featured in a tv show that was about Hawaii. We were very curious about it and wanted to know how different it is from a deep fried bread and Sata Andagi from Okinawa! We used Katakuriko instead of corn starch which was used in a cookbook since we didn't have any on hand. They are very fluffy and delicious!!This is an easy dough since you don't need to let it rest. It's easy to roll the dough as it's not that tough. They don't make any sizzling sounds when you deep fry them . Maybe because they don't contain moisture that much...but you can still get a nice golden color.Put each malasada in a plastic bag with granulated sugar and shake it around to easily coat them with sugar.
