Dal bati churma is a traditional dish of rajsthan. Mostly raajsthani people make dal bati in dal bati oven. Here I had made it in appe pan.
Cooking Instructions

Firstly in a large bowl take wheat flour,salt, baking powder and ghee. Mix well making sure the dough is moist. Now add water as required and knead the dough.

Knead a soft dough and keep a side for 10 -15 minutes.

Now in a pressure cooker take green moong dal, chana and Masoor dal. Pressure cook for 4 whistles adding little turmeric powder and salt.

Now in a kadhai heat ghee and splitter mustard seeds cumin seeds,hing, dried red chilli and bay leaf. add slit green chilli and ginger garlic paste. Add chopped onion and saute well.

Now add tomato and saute well. Additionally add turmeric powder, chilli powder, garam masala, dhaniya powder and salt. Saute on low flame.

Now add cooked dal and water. Mix well. Simmer it for 5 minutes. Now add coriander leaves and mix well.

Now make a small ball sized dough and roll. Roll without giving much pressure. Now heat appe pan on law flame. Place the rolled bati in each mould. Cover and cook it on low flame for 8-10 minutes. Flip over and cook other side. Now bati is cooked. Dip the bati in ghee for make it more soft from inside. Soak it around 10-15 minutes.

Serve dal bati with garlic chutney and onion. While serving add more ghee.

Childhood memories: Sunday was family day. Our traditional Sunday lunch would always include a fresh deep fried fish and Hasmo. This would be served on a thaal which is a big silver plate. “Hasmo” for us means mixing everything together. We’d mix the dhaal, rice , roti , fried chillies , kachumber (onion salad) together in the middle of the thaal and then make a tiny space to put the hot charcoal and then pour hot ghee over the mixture. We would then cover all with another big plate to smoke it. Once smoked we would all enjoy and eat together. It is a family food that I really miss!I would call this dish that I made today as ‘Hasmo’ but other people call it ‘Dal Khichdi’ or ‘Khichdi’This is how I made mine. M.A.DFoodie -
