Ingredients

  1. baati
  2. 1 KgWheat flour (mota/gol Attaa)
  3. 200 gDesi Ghee (moain)
  4. 1 TeaspoonSalt
  5. 200 gDesi Ghee (for Dipping)
  6. dal
  7. 200 gUrad Dal (yellow)
  8. 50 gChana Dal
  9. 1 teaspoonturmeric powder
  10. 1-1/2 tsp Red chilli Powder
  11. 1 TeaspoonGaram Masala
  12. 1 TeaspoonCoriander Powder
  13. as neededFresh Coriander leaves
  14. 2medium sized Onions
  15. 4Tomatoes
  16. 1 teaspoonGinger and Garlic Paste
  17. 6-7whole Black Peppers
  18. 2-3 LeavesTej Patta
  19. 4 SpoonsDesi Ghee
  20. 1 pinchhing
  21. 1/2 spooncumin seeds
  22. 1lemon (if you want)

  24. 500 gwheat flour (Gol Atta)
  25. 100 gDesi Ghee (for moain)
  26. 350 gBoora (sugar powder)
  27. as neededDry fruits (Raisins, Cashew,Almonds)

  29. red chutney
  30. 1Whole Garlic

Cooking Instructions

    To prepare the BAATIS, take a bowl and add Mota Aatta, salt and ghee. Using your hands, knead a slighty (like parantha dough) stiff dough with warm water. Shape the dough in the size of ping pong ball. Meanwhile, heat a gas tandoor and roast the dough balls on low heat for sometime and keep turning them from time-time. Make sure they are brown/crusty from the both sides. Now take a pan and heat 200g of Desi Ghee and break open your baatis from top and then add them one by one before serving.

    To prepare DAAL,wash both the dals together and soak them for half hour,now take a cooker and add 3 glass water and turmeric, Black peppers, sallt, tej patta. Cook the dals till 3 whistles. Take another kadhai and add 4 spoons Desi Ghee,then add hing and cumin seeds. Add chopped onion&ginger garlic paste and let them turn brown then add blended tomatoes. After 5 mins add coriander powder, garam masala, chilli powder. After half a min add boiled DAL into it.

    Bring DAAL to a boil. To get that extra zing, add lemon juice in it, check and add salt if required.Take a small pan and add 5-6 spoons od desi ghee and let it melt then add Degi mirch and keep it on a low flame amd immediately take it off the gas. Garnish it with the desi ghee chonk and freshly chopped coriander leaves.

    To Prepare Choorma, make dough just like baati with the baati ingredients. Make a ping pong balls just like before and roast the baatis on tandoor. Let them cool for 5 mins till you are able to hold them. Now reak the baatis with you hands to make choorma. Now take a rice sieve and pour all the the crushed baatis and sieve them. Now take the rest of the big pieces of baatis and grind them in grinder. Add both the mixture together.

    Now add crushed sugar and raisin and chopped almonds And cashews into it and mix them well. Now add cardamon powder and mix it again. Also add warm ghee. And mix it properly. Your choorma is ready. You can use this choorma for 10 days (keep it in a fridge).

    For Red Chutney, peel off the garlic cloves. Take garlic, tomatoes, salt, red chilli and 2-3 spoons of water into the mixer and make a paste.

    Now take a pan, pour 2 spoons of oil and the chutney paste. Cook for 3-4 mins and keep stirring it. It's ready to be served.

    Decorate all these in the thali and serve it hot
