This is one of the most simplest of Rice variations that's popular down South. Sambar is a great side dish that is a treasure house of numerous Vegetables and Lentils that are full of Vitamins and Minerals. A healthy option for the whole family.

This is the most loved one in my family and it is part of a once a week menu without fail.
What more to say about this beautiful fusion of Rice and Vegetables plus Lentils broth. Absolutely delectable and yum. It goes well with many a South Indian Breakfast recipes like Dosas, Medu Vadas, Uttappams , Idli and Upma.
Not only that, it has a charm of it's own and can be made at main meals to go along with Hyderabadi Tala huwa Gosht just like how I do.

Ingredients

35-40 minutes
4-5 servings
  1. 1 cupPigeon Pea Lentils or Toor Daal
  2. 2 cupsRice
  3. For the Sambar powder-
  4. 2 tspCoriander Seeds
  5. 2 tspUrad Daal or Black Gram
  6. 2 tspBengal Gram or Chana Daal
  7. 4-5Dry Red Chillies
  8. 1 tspFenugreek Seeds
  9. 1/2 cupCoconut powder
  10. For the preparation of Sambar-
  11. 1Ginger shredded
  12. 10-12 piecesDrumsticks
  13. 1/2 cupOkra or Bhindi
  14. 2-3Tomatoes chopped
  15. 2Onions chopped
  16. 1/2 cupBottle Gourd chopped
  17. 3-4Brinjals cut into pieces
  18. 1/2 tspTurmeric powder
  19. 1 tspRed Chilli powder
  20. For the tempering-
  21. 2-3 tbspGhee
  22. 1/8 tspAsafoetida or Hing
  23. 2 SprigsCurry Leaves
  24. 2 tspSalt or to taste
  25. 1 tbspBlack Mustard Seeds
  26. 1/2 cupTamarind water

Cooking Instructions

35-40 minutes
  1. 1

    Prepare Rice as per your requirement and keep aside. Meanwhile dry roast all the ingredients mentioned under Sambar powder and grind to a powder. Set aside.

    Pressure cook Daal and Vegetables with some Ginger Turmeric, Sambar, Red Chilli powders and Salt. Set aside. In a large pot, heat Ghee and prepare the tempering.

    To this prepared tempering, add in the cooked Rice and the Vegetables along with Daal. Add some Tamarind water as well and adjust Salt according to one's own taste. Cook on a low heat for about 10-12 minutes or so. That's it. All done and absolutely ready. Dish it out piping hot with Poppadums or Papad alongside. Enjoy! Yum!
