Ingredients

  1. 1medium cauliflower
  2. 2medium size carrot
  3. 1 cupgreen peas
  4. 1 cupcorn kernels
  5. to tasteSalt
  6. as requiredWater for boiling veggies
  7. 1/4 cupoil or butter
  8. 1 tbspfinely chopped garlic
  9. 1 tspred chilli flakes
  10. 1small onion finely diced
  11. 2 tbspall-purpose flour
  12. 2-3 cupmilk
  13. 1/2 tspblack pepper powder
  14. 1/4 tspnutmeg powder
  15. 1 cupshredded mozzarella cheese
  16. 1/2 tspdried mint(optional)

    Wash and cut the cauliflower florets add as many veggies as you want of your choice in your casserole. I used carrot,peas and corn kernels along with cauliflower you can even use beans,potato, broccoli up to you boil them on a high flame with little salt when it starts boiling simmer the flame to low boil it for another 2 mins off the flame and leave it in that bowl.

    Don't cut the veggies too small otherwise it will be mushy. Now in a wok add oil/butter to it add finely chopped garlic cloves along with red chilli flakes saute and add finely chopped onions add salt and saute it until translucent then add 2 tbsp of refined flour and saute until the raw smell goes away now add milk gradually stirring continuously so that no lumps are left there now add black pepper powder and nutmeg powder to it mix well add water or milk to adjust the consistency.

    Don't make it too thick it will become thicker after cooling. When it comes to boil off the flame and add cheese to it any of your choice but be generous with cheese. Now in a baking dish assemble your boiled veggies pour the prepared sauce over it mix it gently by the time taste your sauce and adjust according to your taste if you want to add more cheese sprinkle on top of your dish bake it in a preheated oven at 180°c for roughly around 25-30 mins or until completely cooked.

    At the time of plating sprinkle some crushed mint over it. Serve hot. If you kids didn't like the big chunks of vegetables slightly press it after boiling especially the cauliflower and broccoli type veggies. You can even make it in microwave on the grill mode and on the stove top too just remember one thing add the cheese at last time when making on stovetop but to me it tastes best when baked in oven.

    IMPORTANT
    There is not any accurate measurement because these dishes depend on ones taste buds so feel free to use the spices according to your taste and preference.
