This is a very common and awesome instant onion Pickle recipe which is very easy to make and very delicious too.
Cooking Instructions

Soak the onions then peel them by this it will be easy to peel off the onion skin then wash it and thoroughly soak it. There must be no water in the onion it should be completely dry. Clean and wash the green chilies also and dry them properly. Now take a glass jar it should be neat and clean and must be dry though out.

Now slit the onions till 14th in a cross or plus shape it will absorb the liquid and become tastier. Slit the green chillies also or you can cut it in half longitudinally. Once done put all the onions in the neat and clean jar then add salt, sugar, food colour or beetroot and slit or cut green chillies. Then add the vinegar you can use any vinegar of your choice or taste just make sure the onions are submerged in it. The level of the onion and vinegar must be equal.

Now it well and tightly put the lid on. You can enjoy it as it is done but taste great after 6-8 hours when the onions absorb the liquid. Store it in the refrigerator and enjoy for 7-8 days. You can have this Pickle with any meal.
