Ingredients

20 minutes
  1. 200 gmsPaneer cubes
  2. 2 tbspOil
  3. 1/4 cupFresh curd
  4. 1/2 cupTomato cashew purée
  5. 3 medium sized tomato
  6. 4 to 6Cashew nuts
  7. 1Onion finely chopped
  8. 1 tbsGinger garlic paste
  9. 1/4 tspasafoetida
  10. 1/4 tsphaldi
  11. 1 tspred chilli powder
  12. 1 tspsugar
  13. 1/2 tspsalt (as required)
  14. 1 tbskasuri methi
  15. 1/3 cupwater (as required for desired consistency)
  16. 1/4 cupfinely chopped coriander leaves
  17. 1/4 tspgaram masala
  18. For achari masala
  19. 1 tbscoriander seeds
  20. 1 tspjeera seeds
  21. 1/2 tspmustard seeds
  22. 4-6methi seeds
  23. 1/2 tspfennel seeds
  24. 2Red chillies

Cooking Instructions

    Dry roast all the above spices which are used for achari masala. Let it cool down and grind it well. Keep it aside. Or you can use readymade achari masala. Approximately 2 tbsp.

    Heat the oil in a pan on medium flame. Add asafoetida, and ginger garlic paste. Stir well. Add Kasuri methi then add chopped onion and sauté till golden brown.

    Add cashew tomato puree. Saute till the moisture evaporate. Add achari masala powder, haldi, red chili powder, and garam masala. mix and fry on low flame for 2 to 3 minutes.

    Now add the curd and stir well. Add water to adjust the consistency. Cover and cook for 2 minutes.

    Now add salt and mix well. Add paneer cubes. Mix well. Cover and cook for 2 minutes. Achari paneer is ready to serve. Transfer it into a serving bowl. Garnish with finely chopped coriander leaves.
