Rajma is the Hindi word for kidney beans. However, this delicious vegetarian curry is so popular that the recipe has become synonymous with the bean. Both the beans themselves and this dish that features them are known as Rajma.

There are many varieties of kidney beans available in the Indian market. From the deep dark maroon red rajma to the lovely to look at streaked colored bean, the small white colored kidney beans and the unique black rajma. The size of these beans also varies from small to medium to large.

I always prefer Chitra Rajma. This Rajma recipe is a lightly spiced, creamy and delicious Punjabi style curry made with protein rich kidney beans, aromatics like onions, ginger, garlic, fragrant spices and tangy tomatoes. Here I am sharing simple, traditional though delicious my mom’s recipe of Rajma Masala. This is absolutely comforting and satisfying Rajma Curry which is one pot meal.

Ingredients

  1. 1 cuprajma (kidney beans)
  2. 3onions
  3. 3tomatoes
  4. 2green chillies
  5. 7-8garlic cloves
  6. 1 inchginger
  7. 1 tspkasuri methi
  8. 1 tbspoil
  9. 1 tbspghee
  10. 1 pinchhing
  11. 1 tspcumin seeds
  12. 1bay leaf
  13. 1red chilli
  14. 2-3cloves
  15. 1 piececinemon
  16. 1black cardamom
  17. 1 tspred chilli powder
  18. 1 tspcoriander+cumin powder
  19. 1/2turmeric powder
  20. 1 tspkitchen king masala
  21. As per taste Salt
  22. leavesAs Per Required Fresh coriander
  23. As Required Serving: salad and mint buttermilk

Cooking Instructions

    Take 1 cup of kidney beans wash them and soak them overnight. In the morning again wash and drain the water and put it into the cooker. Add required water and salt. Now take 3-4 whistles.

    Till then finely chop the onions. Grind tomatoes with ginger, garlic, and chili. Make a fine pury out of it.

    Open the cooker, check the beans and prepare masala for tadka. Take a Kadai, and add oil and ghee. Add cumin seeds, red chili, khada masala, and hing. Let it splutter.

    Now roast onions on medium flame. Add dry masala, saute them and add tomato pury and give it a mix.

    Add Kasuri methi and fry till it becomes dry and releases oil. Add boiled rajma with its water.

    Now put again in a cooker for 1 whistle so that all masala is absorbed and becomes a bit thick and tasty. After that, you can see our rajma and its consistency is perfect. Garnish with coriander leaves and serve it hot.

    Here I have cooked jeera rice and salad dish to serve it along with mint flavor buttermilk.
